Ipomoea batatas (sweet potato) is a globally important tuber crop with high economic, nutritional, and biotechnological value. Understanding the structure and function of plant tissues in this species plays a crucial role in increasing productivity, resilience to environmental stress, and developing biotechnological applications. This study aims to map global trends, knowledge structures, and current research directions on Ipomoea batatas plant tissues through bibliometric analysis. Data were obtained from the Scopus database for the period 2020–2025, resulting in 1,905 initial publications. After a screening process using inclusion and exclusion criteria according to PRISMA guidelines, 276 articles were identified as relevant and analyzed using VOSviewer software. The mapping results revealed five main clusters: (1) plastid dynamics and carbon allocation; (2) genetic regulation of pigment biosynthesis (anthocyanins and carotenoids); (3) root system architecture (RSA); (4) adaptation to abiotic and biotic stress; and (5) application of multi-omics technology and non-destructive phenotyping. The literature integration shows that I. batatas research has shifted from a classical anatomical approach to more integrative molecular and physiological studies. However, research gaps remain in linking tissue anatomy data with spatial transcriptomics and metabolomics analyses, as well as a lack of field validation in tissue physiology studies. This study provides a scientific basis and strategic direction for deepening I. batatas plant tissue research within the context of modern physiology and biotechnology.
